So Simple It’s Silly is a series of incredibly easy sweet and savory recipes. Minimal ingredients, great short cuts and not at all time-consuming.

Steadily going through my backlog of materials, I’m going to try to blog all blogable materials before the year is out. Wow, such a heavy goal for me I know! Of course if I don’t complete it, it’s ok, I have to stop pointing out what a horrible blogger I am or you readers might start to really notice it! I made this Kimchi & Spam Fried Rice for a Sunday Night dinner months and months ago and forgot why I never blogged it. Super simple fried rice with lots of flavor, nom nom nom!

INGREDIENTS:
5 cups cold hard cooked Rice (rice cooked with less water than normal)
2 cups Kimchi, chopped (homemade or favorite brand)
1/4 cup Kimchi Juice
1 1/2 cups Spam, diced (or favorite sausage)
2 tbsp Olive Oil
4 tbsp Unsalted Butter
1 1.5 inch of Ginger, diced or thinly sliced
4 Garlic Cloves, minced
4 Scallions, sliced with whites and greens separated
2 tbsp Low Sodium Soy Sauce (or to taste)
3 tbsp Sesame Seeds
3-4 Sheets of Roasted Seaweed, sliced or crumbled (whatever is easier)
Black Pepper
5 Eggs, sunny side up or over easy

METHOD:
1. On medium high heat, add olive oil and brown spam. Remove to paper towels and set aside.

2. Melt butter and stir fry garlic, ginger and scallions (white parts) until fragrant 1-2 mins, careful not to burn. BTW, see all that black stuff at the bottom, that’s flavor!!!

3. Add kimchi and juice, stir fry until warm and all fond (all that awesome flavored stuff that’s stuck to the bottom) has dissolved.

4. Add rice, turn up heat to high and mix (stir fry) quickly until rice has absorbed kimchi liquid and heated completely through.

5. Return spam to mixture, adding sesame seeds, scallions (green parts), soy sauce, seaweed and black pepper. Toss together 1-2 min or until spam is hot.

6. Top with fried eggs, sesame seeds, scallions and seaweed!

Easy! I love the vinegary heat of the kimchi and the saltiness of spam put together. I grew up eating spam and don’t shy away from it like most people do, yes it’s high in calories, but every so often, I say INDULGE!!

After cooking and cleaning up, I see this is what my family has left me with, a few spoonfuls of rice and some egg whites.. mmmhmm.. thanks fam bam!
