So Simple It's Silly: Quick Summer Pasta

Today was a busy day. Started out with forgetting to turn off my alarm this morning, so I was up 3 hours earlier than planned. Gymboree with my niece, did some work, shopped for a friend’s baby shower gift, took care of some personal errands, did a milk tea run and finally home to play with my niece. Contemplated a trip to the gym but was too exhausted from the running around. My days off are never really “off”, it’s the only time I really get to take care of things.

I was starving pretty badly when I got home so I put together a quick pasta to satiate my need for food. A few ingredients from the fridge and pantry and it was a satisfying quick dinner. I went for more veggies than pasta tonight, though I’m trying to eat better; I still couldn’t resist adding bacon because well… it’s bacon! I didn’t bother with a fancy pretty pictures tonight, so I apologize for the quick shots! After this post, I’m dragging my incredibly weary bum to bed, tomorrow is another long day.

So Simple It's Silly: Quick Summer Pasta

INGREDIENTS:
5 Thick-Cut Bacon strips, sliced
1/2 Lbs Penne Rigate, cooked per package direction
1/2 lbs Mini Heirloom Tomatoes, cut in half
2 cups Crimini Mushrooms, quartered
2 cups Baby Zucchini, sliced
3 Garlic Cloves, finely minced
1/2 cup Onions, finely diced
1 tsp Dried Thyme
2 tsp Dried Oregano
1 cup Pasta Water
Red Pepper Flakes to taste
Salt to taste
Pepper to taste
Crumbled Goat Cheese

 

METHOD:
1. Over medium heat, cook bacon until fat is rendered and bacon is crispy. Remove to paper toweled lined plate and set aside. Remove all but 2 tablespoon of bacon fat

2. Turn heat to medium high, add onions, garlic, salt and pepper to bacon fat and saute until onions are translucent, about 4-5 mins.

3. Add mushrooms, red pepper flakes, oregano and thyme; continue to saute until slightly wilted, about 4-5 mins.

4. Add zucchini and cook another 1-2 mins.

5. Add pasta and toss lightly, add 1/2 cup of pasta water, if dry, add the rest of the pasta water.

6. Add tomatoes and toss until warm, about 1-2 mins.

7. Serve pasta topped with crispy bacon and because I had some in the fridge, goat cheese

20 minutes and I’m satisfied! Now it’s time for bed, good night world!
