So Simple It’s Silly: Summer Veggie Pasta

So Simple It's Silly: Quick Summer Pasta

Today was a busy day. Started out with forgetting to turn off my alarm this morning, so I was up 3 hours earlier than planned. Gymboree with my niece, did some work, shopped for a friend’s baby shower gift, took care of some personal errands, did a milk tea run and finally home to play with my niece. Contemplated a trip to the gym but was too exhausted from the running around. My days off are never really “off”, it’s the only time I really get to take care of things.

Sgnor Chai-Tau – Cambodian Daikon and Meatball Soup

EDIT 9/29/2015. Lovelies, when you see this speaker icon feel free to click on it, it’ll take you to a Clyp audio file with the Khmer pronunciation! I’ve been looking for a site to do this on, sometimes it’s hard to phonically spell Khmer words using English letters, I hope this will help!

I cook, truly I do! I just never get around to processing pictures and talking about the dishes! I still haven’t processed pictures from my trip a few weeks ago to Vancouver for everyone to see! No more excuses! I know, I keep telling myself that. In the middle of balancing work, the blog, personal life, family life and being the ultimate aunty, I still have to find time to take care of myself. As I age, I know my metabolism isn’t as quick, my body feels the wear and tear of life more so than it used to.

Short Ribs Stir Fry w/ Peppers, Pineapple and Thai Basil

So…. HI!

Short Ribs Stir Fry w/ Peppers, Pineapple and Thai Basil

It’s been well over a month since I’ve posted anything, I know, I am so ashamed! In my defense, I really meant to! Really I did, but June was a fantastically busy month for me! I catered the biggest event in my career to date and it went FABULOUS! My clients were happy, their guests ecstatic, my staff was well paid and I proved to myself I could handle such a big crowd. Happiness all around! My birthday also happened, I’m officially in my mid-thirties. I think I just gagged saying that. Mid-thirties, I’m no longer a spring chicken *sigh*, I age pretty well, as in I don’t usually mind my birthdays, but when it’s significant, I start to remember that I am not as accomplished as I wish at this age. I suppose it’s just more incentive to make more goals happen so I don’t feel this way on my next birthday.

Sgnor Sach Moun - Cambodian Chicken Soup

Today is my day off, but like all my days off, I have more work to do than when I’m working. I woke up early this morning to do some admin things and to do some grocery shopping. My mom is home today as well, it’s her day off and for some reason, when I saw her tiny frame lounging on the couch with my niece asleep next to her I was filled with emotions. I needed a taste of my childhood and I knew exactly what I ask for. Chicken soup. Chicken soup truly is for the soul, I can’t think of something more warm and satisfying, I never needed to be sick to crave chicken soup.

I am 2 weeks behind now! Yayyyy! I’m catching up and striving hard to stay to date on my 52 Weeks of Blogging challenge, though this month is insanely busy for me. I’m hoping I will be caught up by July. I can’t believe how busy this summer is already shaping up to be. I have a trip to Vancouver in a few weeks to see family I haven’t seen in a few years. The best part will be learning to make a few very traditional Khmer dishes from my Aunt, I can’t wait! Both my Mom and Aunt are phenomenal cooks and I’m very lucky to have access to their cooking skills. We’re taking my niece up and it’ll be the first time she’s meeting her cousins, actually it’ll be the first time I’m meeting 4 of the 5 nieces and nephews I have up north. It will be a very loud and tiring vacation, but those are always the best.
